This product is obtained by processing and refining the polysaccharide high molecular weight polymer produced by the fermentation of Xanthomonas campestris and its starch.

This product swells into a colloidal solution in water and is insoluble in ethanol, acetone, or ether.
Milk white to light yellow brown powder. Soluble in water at room temperature to form a semi transparent viscous liquid, insoluble in organic solvents such as ethanol, isopropanol, and acetone. Xanthan gum solution has good viscosity enhancement and is quite stable in the range of -4 to 80 ºC. When the concentration of ethanol, isopropanol, or acetone in water exceeds 50% to 60%, it will cause precipitation of xanthan gum. The ability to resist acid, alkali, and biological enzyme degradation is strong, and the viscosity of xanthan gum solution is not affected by the pH value in the range of 1.5-13. Xanthan gum is a natural polymer compound, with an oral LD50>10g/kg in rats, and no special regulations are required for ADI (FAO/WHO, 1994).
