Citric acid monohydrate is a weak organic acid used to add sourness to beverages and foods. The conjugate base of citric acid is citrate, which is an important intermediate in the citric acid cycle in biochemistry.
Citric acid is the largest organic acid produced by biochemical methods in the world. Citric acid and its salts are one of the pillars of the fermentation industry and are mainly used as acidifiers, solubilizers, buffers, antioxidants, deodorants, flavor enhancers, gelling agents, colorants, etc. in the food industry.
 
Product use

Among food additives, citric acid is mainly used in carbonated beverages, fruit juice drinks, lactic acid drinks and other refreshing beverages and pickled products, and its demand varies with seasonal climate. Citric acid accounts for about 2/3 of the total consumption of acidulants.

Adding citric acid to canned fruit can maintain or improve the flavor of the fruit, increase the acidity of certain canned fruit with lower acidity (low pH value), weaken the heat resistance of microorganisms and inhibit their growth, and prevent bacterial swelling and destruction that often occurs in canned fruit with lower acidity.
Adding citric acid as an acidulant in candies is easy to coordinate with the flavor of the fruit. Using citric acid in gel-like foods such as jams and jellies can effectively reduce the negative charge of pectin, allowing pectin molecules to gel through hydrogen bonds.
In the processing of canned vegetables, some vegetables have alkaline reactions. Using citric acid as a pH regulator can not only play a seasoning role but also maintain its quality.
Citric acid has the characteristics of chelation and pH adjustment, which can improve the performance of antioxidants, inhibit enzyme activity, and extend the shelf life of food in frozen food processing.
