Sucrose is the main component of sugar and a disaccharide (double sugar) widely found in plants in nature. Its molecular formula is C12H22O11. It tastes sweet and can provide energy for the human body. It is a white, odorless crystal or powdered solid. It is easily soluble in water and methanol; slightly soluble in ethanol; insoluble in ether.
Sucrose is formed by the dehydration condensation of one molecule of glucose and one molecule of fructose. At high temperatures of 150ºC~200ºC, caramelization reaction can occur. In the human digestive system, it is decomposed into fructose and glucose by digestive juice, absorbed through the small intestine, and provides energy for the human body.
Sucrose is almost universally found in leaves, flowers, stems, seeds and fruits of the plant kingdom. It is particularly rich in sugarcane, beets and maple sap. Sucrose is an important food and sweet condiment. There are sucrose products such as white sugar, brown sugar, soft white sugar, rock sugar, and raw sugar (yellow sugar). In cooking, it can be used for seasoning, coloring, adjusting the texture of raw materials, removing sand and pulling silk, sterilizing and preserving, and adjusting the fermentation speed. In the field of medicine, it can be used as a diluent, flavoring agent, adhesive and coating material.
